Microwaves, Salmon and Will Schuester

You know those weekends that are booked solid? This was one of them. My Nana died a week ago Monday, three days before her 108th birthday. Crazy, right? Friday we were at the funeral and then the reception after that. I love this photo of Kim and my cousin Alicia with Drew taken at the reception... he's just sacked out doing what he does best: eating.

Saturday we drove to New York to visit AJ's dad, Andy, and sister, Meredith and Meredith's bf Chuck. A pic of the Migonis'... does Drew look like them?


On a different note... Last week we decided to finally bite the bullet and spend the money to purchase the microwave... you may be wondering why we waited to purchase the least expensive appliance... well, it's because: 
1. it was killing me to spend the money on something we had that worked perfectly well and wasn't from 1950
2. built in microwaves are out of control expensive compared to countertop microwaves
The area where the microwave was intended to go looked hideous with the microwave there and the toaster oven on top of it... so we finally bit the bullet. Here is the finished product... this doesn't effectively show all the groaning and frustration that AJ put into installing it.

And as a reward for my hubby's hard work I prepared dinner. One handed (I was holding a baby with the other hand who wouldn't let me put him down without him screaming bloody murder). Needless to say, it took me double the amount of time (most things do now...). AJ and I love stuffed mushrooms and salmon... so I made a combo of the two for dinner. The mushrooms were stuffed with mushroom pieces, mozzarella cheese and grated carrots and then topped with small pieces of salmon. I popped them in the toaster oven until the salmon was cooked. They were delish served on top of steamed asparagus and sooo easy (my kind of cooking!).

I couldn't resist using my new napkin rings to make things look special... they were a steal at 62 cents each from Pottery Barn. :)

And my last picture of the post will be a nod to our favorite show, Glee. Did AJ rock the Will Schuester look or what?

  1. Oh man... I just laughed for so long with that shot of W.S. and A.J and D. M. HYSterical. He rocked the looks... Go, brother, go... Now let's just see if he can sing Vanilla Ice or Kanye like Willy.
