Orange-Coconut Salmon



Is it weird that I’ve become more confident in every area since having a baby? I guess I figure that if I can co-raise a child I can do anything. One area I’ve been wayyy more confident in is in cooking; I’m a little more open to improvising recipes. I think I’ve mentioned before that cooking dinners are difficult for me (unless I’m grilling or following a recipe to a t). But the other day I bought some salmon and knew we had two giant bags of oranges (oops for not looking before the Market Basket trip). Here’s a variation on an online recipe, it was completely fab:


 
What you need:
  • Salmon (my favorite food ever, well, that and tacos.)
  • Coconut
  • Orange Juice
  • 1 Orange
Make a few holes in the top of your salmon. Pour a little bit of orange juice into the holes.
Put some orange slices under the skin of the salmon.
Pop in the oven at 350. When the fish looks like it’s halfway done cooking sprinkle a bunch of coconut on top of it. It’ll be cooked through when you don’t see the raw fish anymore.

 
Make a super easy and fabulous dipping sauce (it’s sooo worth it):
  • 2 tbs of orange marmalade
  • 1 tbs of Dijon mustard
Mix in a little frying pan over medium heat until it blends. It’s soo good with the salmon and I don’t even like mustard.
 
I also made some homemade applesauce to go with the meal. Yummm… super easy:
  • 5 apples, cut with the skin on
  • ½ cup brown sugar
  • ½ cup water
  • Little bit of cinnamon
Cook over high heat for 10-15 minutes (till the apples are soft). Mash with a potato masher. It’s totally delish. It’s better without the skin but I know the skin has some good nutrients in it so I made us eat it. :)
