“Then Zachariah was filled with the Holy Spirit and prophesied, Blessed be the Lord, the God of Israel; he came and set his people free. He set the power of salvation in the center of our lives, and in the very house of David his servant, Just as he promised long ago through the preaching of his holy prophets: Deliverance from our enemies and every hateful hand; Mercy to our fathers, as he remembers to do what he said he'd do, What he swore to our father Abraham— a clean rescue from the enemy camp, So we can worship him without a care in the world, made holy before him as long as we live. And you, my child, "Prophet of the Highest," will go ahead of the Master to prepare his ways, Present the offer of salvation to his people, the forgiveness of their sins. Through the heartfelt mercies of our God, God's Sunrise will break in upon us, Shining on those in the darkness, those sitting in the shadow of death, Then showing us the way, one foot at a time, down the path of peace.” Luke 1:68-70 MSG
And here we go... Cookie time. :)
I'm not a huge fan of the traditional Christmas cookie... you know the kind that is pretty dry and boring but made more exciting by crazy colored icing? I especially despise the kind that come from the grocery store. Because of my pickiness I've been searching out some new recipes... my mom always made a great Gingersnap cookie growing up so I decided to do a search on All Recipes.com to see if their highest rated recipe was up to snuff.
It was. But of course, there is something about my mom making them that makes them taste a little better. :)
The little guy gave them rave reviews... I think that counts for something... but then again, he does eat pureed pears and broccoli together.
3/4 cup butter (no substitutes), softened
1 cup sugar
1 egg
1/4 cup molasses
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
Additional sugar
Directions
In a mixing bowl, cream butter and sugar. Beat in egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture. Roll into 1-1/2-in. balls, then roll in sugar. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes or until puffy and lightly browned. Remove to wire racks to cool.
There you go... your first recipe of Twelve Days of Christmas. :)
