I'm not a huge fan of the traditional Christmas cookie... you know the kind that is pretty dry and boring but made more exciting by crazy colored icing? I especially despise the kind that come from the grocery store. Because of my pickiness I've been searching out some new recipes... my mom always made a great Gingersnap cookie growing up so I decided to do a search on All Recipes.com to see if their highest rated recipe was up to snuff.
It was. But of course, there is something about my mom making them that makes them taste a little better. :)
The little guy gave them rave reviews... I think that counts for something... but then again, he does eat pureed pears and broccoli together.
Without further ado here is the recipe for Big Soft Ginger Cookies from Barbara Heinze... cookies and photo by Jen Migonis.
3/4 cup butter (no substitutes), softened
1 cup sugar
1/4 cup molasses
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
In a mixing bowl, cream butter and sugar. Beat in egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture. Roll into 1-1/2-in. balls, then roll in sugar. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes or until puffy and lightly browned. Remove to wire racks to cool.
