Summer Salad and Pink Photos

Want a go-to recipe when you have people coming over this spring or summer and don't feel like making something over the top? Try my Summer Salad and add some grilled chicken to it. I promise you won't regret it!


I had two bowls for lunch and here is what I used to make it:


Everything was from my normal grocery store (Market Basket in Gloucester for MA people!) and I got a better deal on the goat cheese at Trader Joe's. I've been trying to buy as much organic and all natural stuff as I can afford and figured something that doesn't have a skin on it to protect it from pesticides (like spinach) would be a great thing to buy organic. The goat cheese, sunflower seeds and Newman's Own dressing are all-natural as well.

Don't you think with some grilled chicken this would make a great Mother's Day lunch? Especially if it's nice enough to eat outside... fingers crossed!

  1. The salad looks wonderful. My favorite meal is a nice salad with some grilled chicken on top to add some protein. I am going to make this on the weekend.
