Lemons and Salmon

Welcome to Food Friday where the salmon melts in your mouth and the boys eat lemons.
This recipe was based off a Pinterest Pin that didn't take me to any site so here is my variation on the pin with what worked!

First, I took out my salmon and made thin slices of a lemon to place under and over the filet.

Add some pats of butter to the top of the fillet and top with some minced garlic.

Wrap the whole thing up in foil... sort of like a Chipole burrito. :)

Bake it at 300 degrees for 30 minutes then take the top of the foil off (like the photo shows) and pop back in the oven to broil for an additional 7-10 minutes (depending on the thickness of your salmon).

You should have a flavorful and tender piece of salmon when you are done! And yes, it was that easy. My kind of recipe.

Before I made my salmon Drew had some fun eating the lemon rind... I didn't get it either, don't worry. :)

His new, and a little bit too big, shoes just felt so grown-up and summery to me... I had to snap a photo.

Happy Weekend, Friends!
Have I told you lately how happy I am to have such fun readers?

  4. HI,
The salmon looks great. It is my all time favorite meal. I do try to buy the wild caught over the farmed when ever I can. The taste is pretty much the same, but I don't like the idea of the farmed salmon. I would pick salmon over a steak anyday. Drew is such a cute little boy. My kids all liked lemons as well go figure.
