My sister, Kim, made these amazing desserts for the Fourth of July... she based them off a Betty Crocker recipe that I can't find for the life of me. Here is her super easy, and delish, dessert:
Recipe for the Ice-Cream
1.5 cups of strawberries, chopped
1.5 cups of blueberries
1/2 gallon of vanilla ice-cream (softened); you probably won't use all of it
Lay a piece of wax paper over the bottom of a 9 x 13 pan.
Spread a thin layer of softened ice-cream over the wax paper.
Place your fruit on top of that in a random pattern.
Cover with a think layer of softened ice-cream.
Cover with a piece of wax paper and place back in the freezer.
Directions
Bake a 9x13 pan of brownies and make identical slices for the outer part of your brownie ice-cream sandwiches.
After your ice-cream has hardened for a few hours use a knife and a spatula to carve out a piece of ice-cream that matches the size of your brownies.
Serve immediately after taking out of the freezer and know that they will go fast....
They were a hit with the young and old(er) in our family! :)
