Pumpkin Chocolate Chip Cookies

I've got the kitchen window open, Drew is napping and I am listening to the wind blow the fallen crispy leaves... it's the perfect fall day.

So, tell me, what is your go to fall treat? I am in love with:
1. Starbucks Caramel Apple Cider
2. Apple Pie (Betty Crocker's classic recipe is my fave)
3. Pumpkin Chocolate Chip Cookies... which, lucky you!, I just happen to be blogging about today...



I need to put a disclaimer on this recipe... something like "once you pop, you can't stop" but since Pringles already took it I need to think of something a smidge more creative. Maybe: "These cookies are life-changing." I'm not joking, though, the other day I ate seven. Seven! And I could have happily kept going but refrained after glancing at my stomach that had just increased by the size of seven pumpkin chocolate chip cookies. But I guess they are life-changing because it'll mean I'll have to increase my exercise regimen by seven-fold.
 
 
I snagged this recipe off of All Recipes and didn't change anything (except, I ran out of vanilla and it was perfect without it!).
 
Ingredients
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
 
Directions
Combine pumpkin, sugar, vegetable oil, and egg.
In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
Dissolve the baking soda with the milk and stir in.
Add flour mixture to pumpkin mixture and mix well.
Add vanilla and chocolate chips.
 
Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

Here is where I am sitting, in close proximity to these cookies. One word: TORTURE.      
 
 
I popped some of that cider in the microwave for a minute and had a nice little fall treat while writing this post. And by, "little fall treat" I mean four cookies, not these little deceptive two cookies you see here. :)

 
Here's our new, and incredibly simple, fall centerpiece. They are just lentils (I think, I filled it last year and don't have the bag) and then I got three little white pumpkins at the grocery store this morning for a whopping 65 cents total. I almost told the cashier to watch Drew while I ran to get more but then opted to be a good parent and stay with my son at the risk of losing white pumpkins to some other cookie and decorating loving mom. I'm joking, AJ, don't worry. :)

  5. If it makes you feel any better, I had SIX of my fave chocolate chip cookies yesterday. And this was after we'd decided to go on a "no sugar" fast. So, that's a major fail, obviously. I say don't be so hard on yourself. . .enjoy the moment!!!

  6. Love the simplicity of the centerpiece and must try the cookie recipe. Never would have thought of combining chocolate chips and pumpkin cookies, but it sounds divine! I mean, how can you go wrong when you add chocolate chips??? Just love this time of year!!!

  9. Your house is so clean! how do you do it? Do you shift the clutter from one side to the other to take pictures? :) Where's the mail and bags and STUFF? haha. These cookies sound amazing, btw.

  10. Meghan, trust me, my house is so not clean all the time. I love a clean house so I do my best to keep it that way but I pretty much always need to wash the floor (Drew has this annoying habit of throwing food on the floor. :)) And yes, sometimes I do just clean around the area for a photo but yesterday the kitchen was genuinely clean because I opted not to nap while Drew slept and instead to clean. :) As for the clutter, I try to have a place for everything... but you will usually see one or two piles in the kitchen of stuff I have no idea what to do with. BUT having a place for the clutter usually makes cleaning up FAR easier.

  11. It all sounds so delish Jen, I wish Israel had more of a fall!! A friend of mine is a Starbucks barista and she told me to try an Apple Chai...I LOVE IT. They steam the apple juice and add the chai concentrate. If you want you can also ask for a shot of the Pumpkin Spice in it as well (just one shot is perfect for any size).
