When Meg from Green with Decor asked me to participate in a St. Patrick’s Day home tour I told her the only way I could participate in anything St. Patrick’s Day related was to make recipe. I have never once decorated for St. Patrick’s Day, and generally decorate with white, blue and gray as opposed to green, but that doesn’t stop me from loving a fun little green treat. This is a super easy variation on the rich and fudgy homemade brownies I shared this summer. The kids love when we make this buttercream frosting (mostly because they get to lick the beaters) but also because it’s so good… on just about anything. Drew asked me if he could put it on his apples the other day (my answer was a resounding “no”).
I first started with my favorite brownie recipe. They are right and fudgy and incredible… this recipe is also found HERE.
Ingredients:
1 cup oil
3 cups white sugar
1 tablespoon vanilla extract
4 eggs
1 1/2 cups flour
1 cup cocoa powder
1 tsp salt
1 cup chocolate chips
Directions
- Preheat oven to 350 degrees. Grease a 9×13 pan.
- Mix together oil, sugar and vanilla extract.
- Mix in the eggs.
- Add flour, cocoa and salt. Mix thoroughly.
- Use a spatula to mix in chocolate chips to the batter.
- Bake 35-40 minutes (unless you are making them in a glass pan which takes me about 55-60 minutes).
After they had cooled we added my go-to buttercream frosting recipe. It’s from a glamorous source: the back of the confectioner sugar bag. π It’s so simple and so delicious.
1 /2 pound confectioner sugar (generally half of a bag)
1 stick of butter slightly melted
2ish tablespoons milk
1 tsp vanilla (or peppermint extract if you want mint flavored)
Cream everything. Add a little more confectioner sugar or a little more milk depending on the consistency you desire.
The big hit in our family are the Andes Mint Chips. I popped a few on the top of each brownie and it gives the perfect minty flavor!
